Country Ham & Grits Quiche with Red-Eye Gravy

QUICHE

6 ounces country ham

½ cup water

½ teaspoon salt

1/3 cup uncooked quick-cooking grits

1 (12-ounce) can evaporated milk

1 cup (4 ounces) shredded sharp cheddar cheese

3 large eggs, beaten

1 teaspoon dry mustard powder

1 teaspoon Tabasco sauce

GRAVY

Pan drippings from country ham

2 cups very strong coffee

2 tablespoons butter

2 tablespoons cornstarch

¼ cup cold water

Salt and freshly ground black pepper to taste
